Description
Only the perfectly ripe grapes are hand-picked and destemmed. The grapes are then lightly crushed and the grape mass is held for several hours of soaking in the sealed press. Oxidation is thus not given a chance. Fermentation on stainless steel tank is done at low temperature (13-17º) under computerized control.The auxerrois is a variant of the pinot blanc. The wine shows nuances of juicy white fruit, such as ripe pear and apple, plus a slight sweetness and soft acidity.Invigorating and easily digestible wine with a high pleasure level. Drink as an aperitif or at the table with poached or smoked freshwater fish. Good with asparagus.
