Description
Appalachian Gap Distillery wanted to create a dry gin to complement their botanical Mythic Gin. They took inspiration from Dutch style gins, with a nod to Indonesia, to create a dry gin featuring emphatic juniper and cumin, balanced with orange peel, angelica, ginger, cassia, coriander, and cardamom. The distillery macerates the botanicals for a week in their base spirit, made in-house from barley, corn, and rye. The result is redistilled in their small copper still through a gin basket packed with more Vermont juniper berries to create an utterly unique and lovely gin.
Tasting Notes:
Aroma: Juniper and spice, with a sweet tickle at the back of the palate
Palate: Crisp yet supple, with emphatic juniper balanced by sweet orange peel, a warm full middle with round notes of grain and spice, lengthened nicely by cumin, cassia, and cardamom.
Finish: Long and intense, with the crackle of spice and sweet orange.
