- T8ke’s Tasting Notes: A more nuanced pairing, this single barrel leads with whiskey character: bigger oak, baking spice and honey, toffee, maple and vanilla cream with touches of red fruit, berry and that lovely, bright, pop of fruit on the nose. Palate is viscous and rich, touch more tannin, touch drier, with blackberry and currant still showing nicely, albeit more balanced against toffee and oaky dryness. Long finish that trades jammy fruits for orange peel, lovely oak, a hint of pipe tobacco and old tannin with blackberry and some strawberry in lighter shades.
