Description
Flavor profile:
Nose: Dried stone fruit (apricot, persimmon), clover honey, baking spice (clove, caraway).
Palate: Rye spice notes of caraway, clove and white pepper complimented by tropical rum notes of sultana raisins, guava and passionfruit. The Barbadian casks give a warming richness up front, while the Jamaican casks impart an earthy, fruity finish on the back end.
Finish: Light and breathy with golden raisins dusted in a whisper of ceylon cinnamon with different lengths of finish that help balance the sweetness of the younger barrels with the soft tannin and baking spice of the longer finish.
