From the Sun Gusano range of awesome agave spirits comes this expression produced in the village of Santa Catarina Albarradas in Oaxaca, showcasing the Tobalá and wild Jabali agave. The agave were roasted in an earthen pit for 25 days before crushing and fermentation, before a double distillation in small clay pots.
