Smooth Ambler Yearling Bourbon Whiskey is crafted from a mash of 73% corn, 15% wheat and 12% malted barley, all of which are non-genetically-modified. By using wheat rather than rye as the secondary grain in the bourbon’s mashbill, Little is able to impart a rounder, softer flavor profile in Smooth Ambler as compared to other bourbons (Pappy Van Winkle and Larceny Bourbon are also wheated bourbons). Once the grains arrive at Little’s distillery, he mashes and ferments them before distilling the wash twice through a copper-pot still. Then, the bourbon is matured for approximately two years in full-sized, charred American oak casks. The casks contribute notes of honey buns, whole wheat toast, almonds and dark caramel to the bourbon. After the bourbon has matured, it is brought to proof using local mountain water before being bottled by hand. Smooth Ambler Yearling Bourbon Whiskey earned the Silver Medal at the American Craft Distillers Awards in 2014.
