The Bliard house was one of the early pioneers for organic farming in the Champagne region. Now the house represents a multigenerational lineage of winemakers who wish to express the terroir through a variety of winemaking techniques. This bottling of “Le Souffle des Garennes” was harvested in 2019 then aged for a year on the lees in French oak. It was made with zero dosage then aged for 42 months in bottle before leaving for Raleigh. This savory Champagne has a linear core of
bright acid that carries
rich baked apple and
peach characteristics for a long finish.
